Why do we do this?

You should get what you paid for.  It's not hard for a chemist to put together cheap ingredients, mainly synthetic ingredients, necessary to mimic the smell of a paticular perfume at a much lower cost, giving you a cheap knock off at a very high price.  Making fragrances is time instensive and expensive because true essential oils require much processing.
